My favorites happen to be chewy brownies. This recipe is quite adaptable. First of all, additional ingredients, like nuts or chocolate chips, can easily be added into the batter, if preferred. Secondly, since these brownies are baked in a large sheet, once cooled, they can be cut however desired: the standard 24 rectangles, 48 smaller rectangles for a larger group, circles with a circle cutter for brownie bites, or even hearts with heart cookie cutters to add a cute touch.
Chewy Brownies
adapted from Recipezaar1 2/3 cups sugar
3/4 cups cocoa powder
1 1/3 cups flour
1/2 tsp baking powder
1/4 tsp salt
2 eggs
2 tbsp water
3/4 cup butter, melted and cooled
2 tsp vanilla extract
chopped nuts or chocolate chips, optional
Preheat oven to 350°F. Mix the sugar with the slightly warm, melted butter. Add the eggs one at a time while mixing. Then add the vanilla extract and water. In another bowl, combine the dry ingredients: cocoa powder, flour, baking powder, and salt. Mix the wet ingredients into the dry. Add nuts or chocolate chips if desired, and mix.
Grease a 13 x 9-inch baking pan with non-stick spray. Then line the pan with parchment paper so that it covers the bottom and the longer sides of the pan: the non-stick spray helps keep the parchment in place and the parchment paper will make it easier to lift the cooled brownies out of the baking pan later on.
Spread the brownie batter into the prepared baking pan. The batter will be quite thick; you might need to use your hands to help spread it. Bake the brownies for 18 to 25 minutes, or until a toothpick comes out slightly sticky. Let the brownies cool all the way in the pan. Once cool, lift the brownies along with the parchment out of the pan, cut as desired, and serve.
Makes 24 brownies.

Alyssa: Hmm, I've actually never tried it with a smaller pan before. Trial and error is probably the way to go about this. It would depend on what you choose to do. If you use one 8x8 pan with all the batter, then you'd definitely need to bake it longer to account for the loss of surface area, which I wouldn't suggest. You could use about 2/3 of the batter in the 8x8 pan to get the same thickness of brownies and that you'd bake a little less, maybe 17-22 minutes.
If you use two 8x8 pans for the batter, then you'd have thinner brownies that you'd bake 15-22 minutes. The best test would be checking the brownies with a toothpick. When you think they're about done, stick a toothpick in the center and if it comes out relatively clean with a few crumbs (not raw batter) then it should be done.

Blanc: Thanks! Yes, you can still make this without parchment paper. You can substitute foil for the parchment, just remember to spray it with some nonstick spray.

ReplyDeleteI made these for a friend's wedding reception last weekend. They had an adorable dessert table and these heart-shaped brownies were perfect. Not only was the recipe a cinch to put together, but these have to be the best brownies I've ever had! I made them this past week for a girls night but halved the vanilla extract and added 1 tsp of peppermint extract for mint brownies! So good!

ReplyDeleteBonjour from France! I found your site while searching for the best brownie recipe ever and am so glad I did. I've never used cocoa powder instead of melted chocolate but these were delicious, rich and chewy. A note to others in France who may find this recipe and not know about the difference between French and American flours : since the protein levels are different, substitute 1/3 cup of the flour with 1/3 cup Maizena cornstarch to prevent your brownies from being too cakey (like the French version of brownies I've had from the patisseries.) I prefer to use la farine à gâteaux which has baking powder in it and a lower protein level but still do the Maizena substitute. J'espère que ça aidera les françaises!
